Apricot Mojito with Lemon Balm: Refreshing Summer Cocktail Recipe

Take advantage of the season with this fabulous fruit mojito

Apricot season is fleeting, so make the most of it. Beyond enjoying them fresh or in desserts, apricots bring a vibrant, sweet-tart brightness to cocktails — like this refreshing apricot mojito.

In this version, ripe apricots are muddled with lemon balm and mint for an aromatic, seasonal drink that’s bright, balanced and perfect for warm afternoons.

Apricot mojito with lemon balm

  1. 1/2 large lime — cut into 1/4″ pieces
  2. 6 large lemon balm leaves
  3. 4 large mint leaves
  4. 3 teaspoons organic sugar
  5. 2 medium ripe apricots — pitted and cut into 1″ pieces
  6. 3 oz (90 ml) light rum
  7. 3/4 oz (20 ml) apricot liqueur or Cognac
  8. 2 dashes orange bitters
  9. club soda or sparkling water

  1. Step 1: In a mixing glass, combine the lime pieces, lemon balm, mint and sugar. Gently muddle until the sugar dissolves and the lime releases its juice. Add the apricot pieces and continue muddling until the apricot is fully mashed and integrated with the herbs. Pour in the rum, apricot liqueur (or Cognac) and bitters. Add several large ice cubes and shake vigorously until well chilled.
  2. Step 2: Fill two tumblers with ice. Strain the shaken mixture evenly into the glasses. Top each glass with club soda or sparkling water, keeping a ratio of roughly 3 parts cocktail to 1 part soda. Garnish with a lemon balm or mint leaf and serve immediately.
