Look, they LOOK (and are) super crunchy, right?

Some time ago — in this post — I mentioned trying a meal plan. I said I usually don’t plan unless I’m spending a whole week with my boyfriend. Lately, though, I decided it was time to make a proper meal plan.
I also explained that my days are mostly spent working on projects and lunch often catches me off guard. I want to fix that. For me, poor planning means eating less than I should or choosing unbalanced meals. Balance and ingredient quality matter most to me.

I recently finished Marie Kondo’s The Life-Changing Magic of Tidying (I enjoyed it!) and it pushed me to tidy other parts of my life. Healthy eating is one of those areas. I’m already mindful about food, but I needed more organization.

Why this introduction? Yesterday I spent about half an hour planning all my meals for the week. Vegetables are the part I least naturally prioritize — I like them, but they’re not my favorite — so I started there. I checked what’s in season, noted a few ideas, then added proteins, fats and carbs. It was simpler than I thought: no elaborate dishes, just straightforward, wholesome ingredients.

Of course I included snacks in the plan, and these oven-baked beetroot chips were one of them. A snack that changes the game! I had a few beets in the fridge and thought, “Why not make them crispy instead of grating them into a salad?” They’re addictive and I can’t do without them now. For me, they are the perfect snack.

Great for kids too!

Many readers here are women aged 25–34, so you might have at least one child. These beetroot chips are perfect for kids: quick to prepare (they bake on their own) and nutritious. Much better than many store-bought snacks, don’t you think?
While I was photographing the chips, my three-and-a-half-year-old nephew came over and asked, “Auntie, what are those? Can I have one?” (He has an adorable lisp that always makes me smile.) We ended up sharing them on the couch. I love moments like that.

CHIPS DI BARBABIETOLE

A simple, healthy snack: oven-baked beetroot chips with a pinch of salt.

Cottura: 30
Tempo totale: 50

Ingredienti

  • 700 gr Barbabietole rosse(circa tre)
  • un pizzico Sale
  • circa 3 cucchiai Olio extra vergine di oliva
  • 2 cucchiaini Aceto di mele(opzionale)

Istruzioni

  • Preriscalda il forno a 150°C in modalità ventilata. Se usi il forno statico, cuoci per 45–50 minuti.
  • Lava le barbabietole sotto acqua corrente e asciugale bene.
  • Taglia le estremità e affetta sottilmente con una mandolina o un’affettatrice. Le fette dovrebbero essere spesse circa 1,5–2 mm.
  • In una ciotola capiente unisci le fette con olio, aceto (se lo usi) e un pizzico di sale. Mescola bene in modo che siano tutte ricoperte.
  • Lascia riposare per 20 minuti in modo che perdano parte del liquido.
  • Fodera due o tre teglie con carta forno e disponi le fette in un unico strato. Se necessario, cuoci in più volte.
  • Cuoci per circa 30 minuti, controllando che non bruniscano troppo. Diventeranno croccanti una volta raffreddate.
