Ingredients

  • 1 can full-fat coconut milk — use the cream only (soft, room temperature)
  • 1 cup strawberries (frozen)
  • 1 cup mango cubes (fresh or frozen)
  • 1 cup pineapple cubes (fresh or frozen)
  • 1 large ripe banana (fresh or frozen)
  • 2–3 Medjool dates, soaked and pitted (optional, for extra sweetness)

Instructions

  1. Add coconut cream (soft at room temperature), soaked pitted dates (if using) and banana to a blender and process until smooth. Add the remaining fruits and blend until creamy.
  2. Pour the blended mixture into popsicle molds and transfer to the freezer. Freeze approximately 6–8 hours or overnight. To unmold, briefly run the molds under warm water and gently remove the popsicles.
