- 2 tsp vanilla extract
- 1/2 cup cocoa powder I like Ghirardelli 100% Cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp instant espresso powder optional but recommended
- 2¼ cups all-purpose flour
- 1 cup semi-sweet chocolate chips
- 1 cup dark chocolate chips

Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone liners and set aside.

In the bowl of a stand mixer, cream the softened butter and both sugars until smooth, about 30 seconds. Beat in the eggs and vanilla until light and fluffy, about 1–2 minutes. Add the cocoa powder, baking soda, salt, espresso powder (if using), and flour. Mix on low speed until just combined, then fold in both types of chocolate chips.
