  • Arrange pineapple chunks on a rimmed baking sheet. Broil until juices release and edges begin to brown, about 8 minutes.
  • Remove the pan from the oven and transfer the pineapple and any released juices to a blender. Start the blender on low, then increase to medium or medium-high and blend until smooth.
  • Pour the puree into a 2-quart ice cream maker and process according to the manufacturer’s instructions until the sorbet is thick and scoopable. If you don’t have an ice cream maker, pour the puree into a metal pan with a tight-fitting lid and freeze until solid, about 3 hours, stirring once or twice for a smoother texture.
