Grilling season is here — or, if you’re like me, you barbecue year-round. In Canada that sometimes means braving chilly weather, but I still prefer cooking on the BBQ and I love a great burger. I wanted a simple stuffed burger and had some pepperoni in the fridge that needed using, so these pizza-stuffed beef burgers were born. They’re flavorful, filling, and easy to make.
If you worry about keeping points low, Flatout Foldits work perfectly as a bun substitute. The five-grain and flax variety I use is just 2 smart points, so I can enjoy a satisfying burger on bread without blowing my daily points. I typically keep the filling simple — pepperoni and cheese — but you can add other toppings to the meat mixture or inside the burgers when you stuff them. Each stuffed burger is only 4 smart points; served on a Foldit, the meal comes to about 6 smart points.
Pizza stuffed burgers on Flatout Foldits

Ingredients
- 1 lb extra-lean ground beef, you can substitute turkey if you prefer
- 2 Tbsp bread crumbs
- 1 Tbsp pizza sauce, different from pasta sauce
- 2 tsp Italian seasoning
- TO STUFF BURGERS:
- 1/4 cup reduced-fat shredded mozzarella
- 12 slices pepperoni
- 4 tsp pizza sauce
- Italian seasoning, to taste
Instructions
- Heat your barbecue to warm.
- In a bowl, mix the ground beef, bread crumbs, 1 Tbsp pizza sauce, and 2 tsp Italian seasoning.
- Divide the mixture into four balls (about 4 oz each).
- Cut each ball in half and flatten both pieces.
- On one piece, spread 1 tsp pizza sauce, add 3 pepperoni slices and 1 Tbsp shredded cheese, sprinkle with Italian seasoning. Top with the other beef piece and seal the edges well so the filling stays inside while cooking.
- Grill the burgers, turning a few times, until cooked through — about 20 minutes.
- Serve on a Flatout Foldit to keep points low.
- Each burger is 4 smart points (or 5 points plus).
