I never liked the flavor of traditional peanut butter fat bombs, so I developed my own version that tastes much better. These bites don’t leave you feeling like you’ve swallowed a mouthful of coconut oil, and they’re very easy to prepare.

Keto-friendly Peanut Butter

For this recipe you’ll want a keto-friendly peanut butter. There’s one simple rule when choosing a jar:

Does it contain anything other than peanuts and salt?

If the answer is no, choose a 100% natural peanut butter. In Australia, many brands sold at Coles and Woolworths don’t include sugar — just check the ingredients list to be sure.

 

Keto Energy Balls Recipe

These keto energy balls are a satisfying treat that won’t turn into a greasy puddle if left out of the fridge briefly. To keep them stable and give them a pleasant texture, I coat the balls in desiccated coconut and add a little heavy cream to the mixture. The cream gives more body and tones down the intensely sticky peanut butter flavor.

Ingredients

  • 4 Tbsp Peanut Butter
  • 2 Tbsp Heavy Cream
  • 1/4 Cup Almond Flour
  • 2 Tsp Erythritol (optional)
  • 1 Tbsp Coconut Flour
  • 1 Tbsp shredded coconut For Rolling

Instructions

  • Combine all ingredients in a bowl and mix until evenly incorporated.
  • Shape the mixture into small balls, then roll each ball in shredded coconut.
  • Chill before serving and enjoy!
