
I love S’mores—the crisp graham cracker, the gooey marshmallow, and the rich chocolate. They always take me back to summertime campfires. These S’mores Brownies are a less messy, extra-chocolatey way to enjoy that nostalgic flavor in bar form.
Inspired by a S’mores cupcake I recently saw, I adapted the idea into an easy brownie. Using a boxed brownie mix keeps this recipe quick: a crunchy graham cracker base, a fudgy brownie layer, melted chocolate, and toasted marshmallow or marshmallow fluff on top. Because the marshmallow sets as it cools, these brownies are cleaner to serve than traditional s’mores.
This simple recipe uses pantry staples and only adds a couple of extra steps to a boxed brownie mix. For a richer twist, swap the milk chocolate chips for caramel-filled chocolate squares or high-quality baking chocolate.

You will need:
1 box brownie mix (plus the ingredients called for on the box)
1 jar marshmallow fluff (or a bag of mini marshmallows)
1 cup graham cracker crumbs
3 tablespoons butter
1 cup milk chocolate chips
Step 1:
Preheat the oven to 350°F (175°C). Melt the butter and combine it with the graham cracker crumbs until evenly moistened. Press this mixture firmly into the bottom of a 10 x 10 inch (or similar) baking pan to form the crust.
Step 2:
Prepare the brownie batter according to the package instructions. Pour the batter over the graham cracker crust and smooth the top. Place the pan on the center rack of the oven.
Step 3:
Bake until a toothpick inserted in the center comes out clean or with a few moist crumbs, about 25–30 minutes, depending on your oven and the mix.
Step 4:
Remove the brownies from the oven and evenly sprinkle the milk chocolate chips over the hot surface. Return the pan to the oven for about 1 minute to soften the chips. Use a knife or offset spatula to spread the melted chocolate into an even layer.
Step 5:
Spread marshmallow fluff over the melted chocolate, or arrange mini marshmallows to cover the surface. Set the oven to broil and place the pan under the broiler, watching closely, until the marshmallow surface becomes golden brown—this usually takes about 30–60 seconds depending on your broiler. Remove from the oven and let the brownies cool completely so the layers set. Once cooled, cut into squares and serve.

4. Spread marshmallow fluff or arrange mini marshmallows on top. Broil briefly—watch closely—until marshmallows are golden, about 30–60 seconds. Remove and let cool completely before cutting and serving.
