Ingredients

For the Chocolate Frosting:

  • 2 tablespoons / 30 ml water
  • 1 ½ teaspoons / 8 g dark muscovado sugar (or dark brown sugar)
  • 3 tablespoons / 42 g unsalted butter, cubed
  • 2.5 oz / 75 g good-quality dark chocolate, finely chopped

  • 4 cups / 460 g confectioner’s sugar
  • 4 tablespoons / 60 ml milk
  • 1 tablespoon vanilla extract
  • Food coloring, optional

Instructions

Make the Chocolate Frosting:

  1. Combine the water, dark muscovado sugar, and butter in a small pan over low heat until melted. When it begins to bubble, remove from heat and add the chopped chocolate. Swirl and let stand for a minute, then whisk until smooth and glossy.
  2. The mixture will be thin at first; set aside and whisk occasionally as it cools—the texture will thicken significantly.

Make the Cakes:

  1. Preheat the oven to 350ºF. Butter two 8-by-2-inch round pans (9-by-2-inch pans will also work). Line bottoms with parchment, butter the parchment, and dust pans with flour, tapping out excess.
  2. In the bowl of a mixer fitted with a paddle attachment, combine both flours, sugar, baking powder, and salt on low speed until combined. Add the cubed butter and mix until the pieces are coated and the mixture looks pebbly.
  3. In a separate bowl, whisk together the eggs, milk, and vanilla. With the mixer on medium, add the wet ingredients in three parts, scraping down the bowl between additions. Mix until incorporated but don’t over-beat.
  4. Divide batter between prepared pans and smooth the tops. Bake, rotating halfway, until golden, pulling from the sides, and a tester comes out clean, about 25–35 minutes.
  5. When the cakes are done, press gently on them with a dry oven mitt to level the tops. Transfer pans to wire racks and cool for 20 minutes. Invert cakes to remove parchment, then reinvert and cool completely, top side up.

Make the Vanilla Buttercream (while cakes cool):

  1. In a mixer fitted with a paddle attachment, beat the butter, confectioners’ sugar, milk, and vanilla until smooth and combined. Set aside until ready to decorate.

Decorate:

  1. Place one cake layer bottom-side up on a cake board. Spread a layer of chocolate frosting, keeping it at least ½ inch from the edge. Add the next layer bottom-side up and repeat if stacking more layers.
  2. If assembling a multi-layer cake, freeze the stacked layers for 10 minutes to firm them before frosting. Chilling helps prevent buckling under the final frosting.
  3. Apply a thin crumb coat of vanilla buttercream over the top and sides using an offset spatula. Chill 20–30 minutes, then apply a thicker final coat of buttercream and smooth as desired.

Notes

If making a four-layer cake, double the frosting recipes and spread about a third of the chocolate frosting between each cake layer before covering the outside with vanilla buttercream.
