Gluten-Free BBQ Pulled Pork Sandwich Recipe for Flavorful Sandwiches

BBQ pulled pork is one of my favorite meals — tangy with just a hint of sweetness. It makes a perfect sandwich, and it’s equally delicious in tacos, on cheese fries, or however you like to serve it.

The great thing about making pulled pork is its versatility — the same batch can be used for sandwiches, tacos, nachos, or even loaded fries. Served on a gluten-free bun, it’s comfort food at its best.

Pulled pork is economical and feeds a crowd, making it a handy option for weeknight dinners or casual gatherings. The flavor develops nicely when the meat is slow-roasted, and finishing it with your favorite BBQ sauce turns it into something unforgettable.

For this recipe I used David’s Balsamic BBQ Sauces. You can use whichever sauce you prefer, but David’s varieties (regular or spicy) work especially well. If you try a new sauce, taste it first — the final pulled pork will take on that flavor, so pick one you enjoy.

One of my favorite ways to use leftover pulled pork is on cheese fries — crispy fries topped with cheese, pulled pork, and a side of ranch. It’s indulgent and addictively good.

Gluten Free BBQ Pulled Pork Sandwiches

BBQ pulled pork is tangy with a touch of sweetness and makes an excellent sandwich or taco filling. It’s versatile and satisfying.

Ingredients

  • 4-5
    pound
    pork shoulder
    skin removed and trimmed
  • Gluten free buns

Pork rub

  • 6 Tablespoons brown sugar
  • 1 Tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon chipotle powder
  • 2 teaspoons salt

BBQ pork

  • 4-5 cups shredded pork
  • 1 bottle BBQ sauce I use David’s Unforgettables
  • 1/2 cup water

Instructions

  • Combine all ingredients for the pork rub.
  • Rub the mixture all over the pork shoulder.
  • Refrigerate the rubbed pork overnight or for at least two hours to let the flavors penetrate.
  • Preheat the oven to 325°F (160°C).
  • Place the pork in a 9 x 13-inch baking pan and pour in 1 cup of water.
  • Cover the pan tightly with foil and bake for 2 hours.
  • Check the pork: it should shred easily with a fork. If not, return it to the oven and check every 30 minutes until tender. Depending on the size of the shoulder, total cook time can reach 4 1/2 hours. If using a thermometer, look for 185–195°F.
  • Remove the pork from the oven and let it cool until it can be handled.
  • Shred the pork with forks or your fingers, discarding large pieces of fat and any bones. You should have about 4–5 cups of shredded meat.
  • Transfer the shredded pork to a pot on the stove.
  • Pour the BBQ sauce over the shredded pork.
  • Add 1/2 cup water to the empty BBQ sauce bottle, shake to collect remaining sauce, and add that to the pot. Stir to combine.
  • Heat over medium-low for about 30 minutes, stirring frequently so the sauce coats the pork evenly.
  • Serve on gluten-free buns with coleslaw if desired, or use the pulled pork in tacos, fries, or other dishes.
