Grilled Honey Dijon Chicken with Veggies and Rice

A quick and delicious weeknight meal — perfect for grilling season.

Ingredients

  • 1–2 lbs organic chicken breasts, trimmed and butterflied
  • 1/2 cup Honey Dijon dressing, (I love Side Dish — use code RACHAEL10 for 10% off)
  • 1 cup mini bell peppers, halved
  • 1 bundle broccolini
  • 1/2 red onion, sliced
  • 1 cup rice
  • salt and pepper

Instructions

  • Preheat the grill to about 500°F (260°C).
  • Trim and butterfly the chicken breasts. Marinate them in the Honey Dijon dressing and season with salt and pepper.
  • In a large bowl, toss the bell peppers, broccolini and sliced red onion with a little extra virgin olive oil or avocado oil and a pinch of pink salt.
  • Prepare the rice according to package directions while you finish prepping the grill and veggies.
  • When the grill is hot, place the chicken directly on the grates and put the vegetables in a grill tray or on a sheet of foil. Close the lid and cook for 5–7 minutes.
  • Flip the chicken and give it another ~2 minutes on the grill, depending on thickness, until cooked through and juices run clear.
  • Serve bowls of rice topped with grilled chicken and vegetables. Drizzle extra Honey Dijon dressing over the top and enjoy.
