Ingredients

Unsalted butter: One stick (4 ounces). Using unsalted butter lets you control the salt level.

Rice cereal: Plain rice cereal adds crunch and balances the Lucky Charms. I use about equal parts rice cereal and Lucky Charms.

Lucky Charms cereal: The cereal provides flavor and the colorful marshmallow charms. Reserve some extra marshmallows to press on top if you like.

Marshmallows: I prefer mini marshmallows because they melt faster, but jumbo marshmallows work too. Use fresh marshmallows for best melting results.

Vanilla and salt: A teaspoon of vanilla and a pinch of salt brighten the flavor and cut some of the sweetness.

How to Make Lucky Charms Rice Krispie Treats

  1. Prepare the cereal and pan. In a large bowl, combine the rice cereal and Lucky Charms until evenly mixed. Grease a 9″ x 9″ square pan with nonstick spray or butter and set aside.
  2. Melt the butter. In a large pot over medium-low heat, melt the butter. Use a pot big enough to hold the marshmallows and cereal comfortably for stirring.
  3. Incorporate the marshmallows. Once the butter is melted, remove the pot from the heat and add the marshmallows. Stir vigorously until the marshmallows melt from the residual heat. If needed, return to very low heat briefly—avoid overheating.
  4. Add vanilla and salt. Stir in the vanilla extract and a small pinch of salt to balance the sweetness.
  5. Mix in the cereal. Add the cereal mixture in two batches, stirring to coat the cereal evenly with the melted marshmallow. Mixing in two batches helps ensure every piece gets coated.
  6. Transfer and press. Pour the krispie mixture into the prepared pan and press down gently to create an even layer. Use a greased rubber spatula or a piece of greased parchment to avoid sticking. Press any reserved Lucky Charms marshmallows onto the top.
  7. Cool, cut, and serve. Let the treats cool completely until set, then use a sharp knife to cut into squares. Enjoy.

Tips for the Best Treats

  • Don’t overheat the marshmallows. Overheating makes them thick and rubbery, which prevents proper mixing. Turn the heat off after the butter melts and rely on residual heat while stirring.
  • Work quickly. The mixture sets fast. Mix the cereal in and transfer to the pan while the marshmallow is still warm and pliable.
  • Press lightly. Press the mixture into the pan gently—too much pressure makes dense, hard bars. For chewy, lighter treats, press just enough to even the surface.

Krispie Treat FAQs

How should I store the treats?

Store the krispie treats in an airtight container or zip-top bag at room temperature for up to 3 days.

Can I use different cereals?

Yes. Swap Lucky Charms for fun alternatives like Fruity Pebbles, Cocoa Puffs, Cinnamon Toast Crunch, or Cap’n Crunch for different flavors and colors.

Do I need parchment paper?

Not necessary. Greasing the pan well usually prevents sticking. If you choose parchment, it can sometimes be harder to work with sticky marshmallows. Once cooled, run a knife around the edges and invert the pan to release the treats.
